Hey there, Food Lovers!

This week I've been having fun in my kitchen! I love getting creative with whatever ingredients I have on hand. And guess what? We were given some fresh homegrown pears and apples, so I've been trying some simple new ideas with those. When a recipe calls for apples or pears they're mostly interchangeable so you can use whichever you have.

I'll share a yummy breakfast pancake stack recipe with you below. Who knows, maybe it'll feature on your Easter weekend brunch menu...?

Inspiration From My Kitchen - Easter Idea With Apples

With apples back in season and Easter approaching, I found myself drawn to the kitchen for some culinary inspiration. As the weather cools down, a cozy breakfast becomes essential, especially during long weekends with leisurely mornings. This idea might even make a perfect weekend brunch!

Here it is plated on both a white plate and a black plate - do you have a preference?

Starting with a straightforward pancake recipe (included below), I infused it with warm, spicy notes by adding some ground cinnamon. Next, I sautéed diced apples in butter and brown sugar until they caramelized, adding chopped walnuts and pumpkin seeds for a delicious crunchy texture.

To top it off, I whipped up a cinnamon caramel sauce by heating equal parts cream and brown sugar until it was thick and saucy. I also added a touch of cinnamon and a splash of vanilla essence.

The outcome? A scrumptious blend of flavours that made for a comforting and indulgent start to my day. The addition of pumpkin seeds not only provided texture but also a subtle pop of colour. I hope you enjoy this delightful creation as much as I did!

Cinnamon Pancakes

Ingredients:

  • 120g (1 cup) self-raising flour 
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 185g (3/4 cups) milk
  • 1 egg

Method:

  • Whisk the flour, baking powder, salt, sugar and cinnamon in a medium sized mixing bowl.
  • Whisk the egg and milk together in a separate bowl.
  • Add the egg and milk to the dry ingredients and briefly whisk until just combined.
  • Warm a little butter and oil in a frying pan to a medium heat. Pour three or four pancakes at a time. I used about 1/8th of a cup of batter per pancake.
  • Cook for a couple of minutes, until they're bubbly, then flip and cook the other side for a minute or two.
